Kale Sweet Potato and Sausage Hash

There is nothing worse than those mornings where every little possible thing goes wrong, leaving you feeling defeated and beyond frustrated before your day even begins. I was already off to a rough start this morning because I accidentally set my alarm for 5:30pm instead of 5:30am *face palm*, causing me to oversleep (shout out to my internal alarm clock). I frantically rushed out the door at 8:49am for my 9am class, got in my car, looked down and saw that dreaded orange light on the dashboard, reading “10 miles until empty”, as if it were taunting me. While I was filling up, I thought back on all the times my mom would tell me, “never let your gas get below a quarter of a tank.”

It wasn’t until I was sitting in bumper-to-bumper traffic that I reached down for my coffee only to realize that I had left it, along with my lunch, on the kitchen counter. (Alexa, play “Everything’s Gonna Be Alright” by Bob Marley)—but seriously. A few bouts of road rage later, I parked, and bolted across campus, when much to my dismay, a torrential downpour began out of nowhere.

But what REALLY took the cake was when I finally arrived to class only to find an empty room—class had been canceled. All of that trouble for nothing.

So what did I do?

I went home and made this bad boy. I mean how could this skillet not turn your mood around? Just look at how vibrant it is!

This also makes for a great weekend brunch or meal prep for the week!

Kale Sweet Potato and Sausage Hash

Prep Time: 15 minutes

Cooking Time: 30 minutes

Total Time: 45 minutes


Ingredients:

  • 1 red bell pepper, diced

  • 3-4 medium sized Japanese sweet potatoes, diced (or regular sweet potatoes)

  • 1 package of Applegate’s Chicken & Apple Sausage, sliced

  • 1 head of Kale, chopped and removed from stem

  • 4 eggs

  • 2 tablespoons coconut oil

  • Salt and pepper to taste

Directions:

  1. Pre-heat oven to 400℉.

  2. In a microwave safe bowl, microwave sweet potatoes for 5 minutes.

  3. When sweet potatoes are done, toss them in 1 tablespoon of coconut oil. Season with salt and pepper to taste.

  4. Grease a 12 inch skillet with the remaining tablespoon of coconut oil and heat over medium heat.

  5. Add sliced chicken & apple sausage and cook for 3-5 minutes or until slightly golden brown. Remove from skillet and set aside.

  6. Add the sweet potatoes to the skillet, and cook them for 5-7 minutes or until the potatoes begin to soften. Add peppers and kale to the skillet. Cook for 3 minutes, stirring frequently.

  7. Now, transfer the sausage back into the skillet.

  8. Make 4 wells (indents) in the mixture, cracking each egg into the well.

  9. Transfer to the oven and cook for 5-10 minutes depending on how runny you prefer your eggs.

  10. Remove from oven and serve hot!
