WHOLE30 BAKED SWEET POTATO TURKEY SLOPPY JOES

WHOLE30 BAKED SWEET POTATO TURKEY SLOPPY JOES

Serves: 2

Prep Time: 5 minutes

Cooking Time: 50 minutes

Total Time: 55 minutes

Ingredients:

  • 1 lbs ground turkey 

  • 1 yellow onion, diced 

  • 8 ounce can tomato sauce 

  • 1/2 cup tessamaes ketchup 

  • 1 tsp ground mustard 

  • 1-2 sprigs of fresh rosemary, stem removed 

  • 1 tablespoon white vinegar 

  • 1 tsp salt

  • 1/4 tsp pepper

  • 1 tablespoon Worcestershire sauce*

To make the Worcestershire sauce:  (Whisk all the ingredients in a bowl until combined)

  • ½ cups Apple Cider Vinegar

  • 2 tablespoons Water

  • 3 tablespoons coconut aminos

  • 1/2 teaspoons Mustard Seed, Ground

  • ¼ teaspoons Onion Powder

  • ¼ teaspoons Garlic Powder

  • ⅛ teaspoons Cinnamon

  • ⅛ teaspoons Black Pepper

Additional:

  • 2 Sweet potatoes 

  • Ghee

  • Green onions, white part removed, green part for garnish 

  • Crispy Bacon Bits, garnish 

Directions:

  1. Preheat oven to 425 and place the sweet potatoes on a parchment lined baking sheet.

  2. Bake the sweet potatoes for 40-50 minutes or until a knife can be inserted without any resistance.

  3. Heat 1 tablespoon of avocado oil in a large skillet over medium high heat. Then add the turkey and onions and cook for about 5 minutes, or until the turkey is no longer pink.

  4. In a small bowl, whisk together tomato sauce, ketchup, mustard, vinegar, Worcestershire sauce, fresh rosemary, salt and pepper.

  5. Pour the sauce over the turkey and onions and stir until evenly coated. Cover with a lid and simmer for 20 minutes, being sure to stir frequently. Keep covered until ready to serve.

  6. When the sweet potatoes are done cooking, cut a line down the middle, spread with desired amount of ghee and top off with the sloppy joe mixture. Add bacon bits and green onions on top.
