Whole30 Chicken Lo Mein

Anyone else love a good LO-MEIN-tenance dinner on Monday’s? I know I do. Catch my pun? Because this #whole30 Chicken Lo Mein is so damn good and it’s ready in just 10 minutes (15 with chicken).

Whole30 Chicken Lo Mein

Adapted from Kitschen Cat

Servings: 4

Prep Time: 4 minutes

Cooking Time: 6 minutes (11 minutes with chicken)

Total Time: 10 minutes (15 minutes with chicken)

Notes:

* Grocery List Below: In order for this recipe to be more time efficient, I used some pre-cut produce. See more at the end of the post*

Ingredients:

  • 16 oz Zucchini Noodles (my fav: Cece’s Veggie Co)

  • 1 tablespoon avocado oil

  • 2 large cloves fresh garlic, minced

  • 1 white onion, sliced thinly

  • 2 cups chopped broccoli

  • 1 red bell pepper, julienned

  • 1 carrot, julienned

  • 2 cups baby bella mushrooms, sliced

  • Green onions, green part only, for garnish

  • 4 chicken breasts, butterflied and cubed 1/4 inch

  • salt and pepper to taste

For the Sauce:

  • 1/4 cup coconut aminos, or more to taste

  • 4 teaspoons date paste (Great how to here)

  • 2 teaspoons sesame seed oil

  • 1 tsp ground ginger

  • 1.5 tsp compliant red chili oil

  • 1/8 tsp cayenne pepper (optional—I use about 1/4tsp for a kick)

  • Red pepper chili flakes (optional—for garnish)

Directions:

  1. Heat the avocado oil in a wok or a large skillet over high heat. Add the chicken and season with salt and pepper to taste. Cook on both sides, about 2-3 minutes each side. Remove from pan.

  2. In a small bowl, whisk all the ingredients for the sauce until thoroughly combined. Set aside.

  3. In the same pan, saute the garlic and onion for 2 minutes over medium high heat. Then add the broccoli, red bell pepper, carrots, mushrooms, and the zucchini noodles. Saute for another 4 minutes.

  4. Now, pour the sauce over the veggies and toss to combine. Add the chicken back to the pan, tossing to combine.

  5. Serve hot!
