Whole30 Cilantro Lime Bacon Wrapped Shrimp with Avocado-Cilantro Sauce

I’m dreaming of these Cilantro Lime Bacon Wrapped Shrimp with Avocado-Cilantro Sauce right now—and believe me, y’all will be dreaming of these bad boys too, once you whip them up in under 30 minutes.

These guys (or girls—anyone else give their food gender labels?) make the perfect side for those Spring bbq, which I am SO ready for!

Tip: Use left over Avocado-cilantro sauce to dip chips in or even toss in a salad as a dressing.


Whole30 Cilantro Lime Bacon Wrapped Shrimp with Avocado-Cilantro Sauce

Total Time: 30 minutes

Ingredients: 

For the shrimp: 

  • 1 lb (20) large shrimp, peeled, deveined, tail on  

  • 10 slices compliant bacon @pedersonfarms, cut in half 

Marinade: 

  • 2 tablespoons olive oil 

  • Juice of 1 lime

  • 1 handful of cilantro, chopped 

  • 1/2 tsp fine sea salt 

  • 1/2 tsp cumin 

  • 1/2 tsp paprika 

  • 1/4 tsp garlic powder 

  • 1/4 tsp black pepper

  • 1/4 tsp chili powder 

For the avocado-cilantro cream:

  • 3 ripe avocados 

  • 1 cup @chosenfoods mayo 

  • 1/2 jalapeño, seeds removed 

  • 3 cloves garlic, chopped

  • 1 bunch cilantro leaves, chopped

  • 2 limes, juiced

  • 1/2 tsp salt 

  • 1/2 tsp chili powder

  • 1/2 tsp lime zest 

  • 1/2 tsp ground cumin 

  • 1/4 tsp cayenne pepper 

  • 1/4 tsp onion powder 

Directions: 

For the avocado-cilantro cream:

  1. Combine all the ingredients in a blender or food processor and pulse until smooth. Store in air tight container and refrigerate, bring to room temp. by removing from fridge 30 min before serving. 

For the shrimp:

  1. Preheat the oven to 400 degrees F. Line a large baking sheet with aluminum foil and place a wire rack on top. 

  2. In a medium sized bowl, whisk all of the ingredients for the marinade together. Add the shrimp to the bowl, toss to coat well. Allow them to marinate for at least 15 minutes. 

  3. Place the bacon strips in an even layer on the wire baking rack. Cook for 8-10 minutes, or until the bacon is reddish in color but still flexible. Remove from oven and cool until they’re easy to handle.

  4. Wrap the bacon around the shrimp and secure with a toothpick. Using a brush, brush the marinade over the top of the bacon. Transfer to the wire rack. Repeat on remain ing shrimp. 

  5. Transfer baking sheet to the oven and bake for 5 minutes, before flipping the shrimp and brushing the remaining marinade over the tops. Bake for 3 more minutes. 

  6. Now broil the shrimp for 2-4 minutes to crisp the bacon—be careful not to burn them. Remove from oven and serve with dipping sauce!
