Not to toot my own horn but these really are the BEST Paleo protein muffins you will EVER eat and they are SO flippin’ easy to make—seriously though, these really will rock your world and change your post workout game.

Paleo Chocolate Banana Protein Muffins

Yields: 9

Prep Time: 7 minutes

Bake Time: 22 minutes

Total Time: 29 minutes


Ingredients: ⁣
DRY:⁣
3/4 cup almond flour ⁣
1/4 cup tapioca flour ⁣
1/4 cup coconut flour ⁣
2 tablespoons flaxseed meal⁣
1 tsp baking soda⁣
1/4 tsp fine sea salt⁣
1/2 tsp cinnamon ⁣
1 scoop @ancientnutrition protein powder⁣
1 scoop @vitalproteins (optional)⁣

WET:
2 large eggs, whisked⁣
1 tablespoon coconut oil, melted ⁣
1 1/2 tsp vanilla extract ⁣
1 tsp white vinegar ⁣
1/4 cup @rebbl chocolate reishi elixir 
3-4 ripe bananas, mashed ⁣
1/4 cup @enjoylifefoods dark chocolate chips⁣

DIRECTIONS: ⁣
1. Preheat oven to 350 degrees F. Line a muffin tin with muffin liners. ⁣
2. Add all wet ingredients in a large bowl (except choco chips) and whisk until well combined. ⁣
3. Add all the dry ingredients to the same bowl with the wet ingredients. Stir until fully combined. Fold in chocolate chips. ⁣
4. Spoon 1/4 cup of the mixture into each muffin tin. Yields 8-9 muffins. ⁣
5. Bake in the oven for 18-22 minutes, or until a tooth pick comes out clean. ⁣
6. Can be stored at room temperature for 2 days and in the refrigerator for 5 days. Enjoy!
