Nacho Average 'Fried' Avocado

Idk about y’all but this Texas girl would take Mexican food over pumpkin any day—sorry pumpkin, I still love you though. I dedicate these TWO new recipes to one of the greatest, Torchy’s Tacos. I’ve reinvented the Trailer Park Taco and even made it “trashy” with my 1 true love, Siete’s Cashew Queso (sorry J).

Avocados breaded in Nacho Siete Tortilla Chips + Lime Juice + Avocado Oil ++ a side of chipotle mayo

Nacho Average 'Fried' Avocado

Serves: 8

Prep Time: 10 minutes

Cooking Time: 14 minutes

Total Time: 24 minutes

Ingredients:

  • 2 avocados, about 1/2 inch slices

  • 1 lime, juiced

  • Salt and pepper

  • 1/2 cup almond flour

  • 1/2 tsp garlic powder

  • 1/2 tsp cumin

  • 1/2 tsp paprika

  • 1/4 tsp chili powder

  • 1/4 cup freshly cilantro, chopped

  • 2 eggs, lightly beaten

  • 1 bag of Siete’s Nacho Tortilla Chips, crumbled into bread crumbs (or any of their other yummy flavors)

  • avocado oil spray (or olive oil spray)

Directions:

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.

  2. Squeeze the lime juice over the avocados and season generously with salt and pepper.

  3. In a shallow bowl, combine the almond flour, spices, and cilantro until incorporated. Set aside.

  4. In a shallow bowl, lightly beat the two eggs. Set aside. In another shallow bowl, transfer the “breadcrumbs”— the crumbled Siete chips, and spread flat.

  5. Begin to batter the avocados, one at a time, by dredging them in the flour mixture, then dipping them in the egg wash, and finally coating them in the “breadcrumb” mixture. Transfer to your prepared baking sheet.

  6. Spray the tops of the avocados with avocado oil before transferring to the oven to bake for 10-14 minutes (oven temps may vary so pay close attention because you don’t want to burn the chips)

  7. Remove from heat and serve with your favorite dipping sauce or try them in my tacos!
