I, like many others, once believed adhering to a healthier diet required an immense amount of time in the kitchen. I also believed eating healthy foods meant eating bland foods. Fortunately, I’m here to tell you cooking doesn’t have to be time consuming and your meals don’t have to be boring. So go ahead, throw out that dry chicken breast and soggy broccoli because my new segment Dinner in 10 is here to spice up your life in the most effortless way.

That’s right, these Paleo Chicken Queso Taquitos (ft. ALL THINGS SIETE) are flavor packed and ready in 10 minutes FLAT.

Paleo Chicken Queso Taquitos

Serves: 4

Prep Time: 4 minutes

Cooking Time: 6 minutes

Total Time: 10 minutes



  • 2 cups rotisserie chicken, shredded

  • 1/2 cup Siete’s Cashew Queso (I prefer the Spicy Blanco for more heat)

  • 1 avocado, diced

  • Juice of one lime

  • 1/4 cup pico de gallo

  • Handful of chopped cilantro

  • 1/4 tsp cumin

  • salt and pepper to taste

  • 8 Siete Tortillas

  • Ghee (or avocado oil)


  1. In a medium sized mixing bowl, thoroughly combine the shredded chicken, cashew queso, avocado, lime, pico de gallo, cilantro, cumin and salt and pepper.

  2. Overlap two tortillas to create one large tortilla—do this for the remaining 6 as well. Evenly spread the mixture over the 4 large tortillas. Carefully roll to form taquito.

  3. Heat the ghee in a skillet over medium high heat. Carefully place the seamed side down in the skillet. Cook for 2-3 minutes on each side, or until golden brown and crispy.

  4. Transfer to plate and serve hot.
