Apricot Prosciutto and Goat Cheese Pizza + How to Plan the Perfect Spring Picnic
I’m going to start this post by claiming that this pizza is hands down my favorite thing I’ve ever made. The combination of apricot jam with goat cheese is ingenious. I still wanted to keep this pizza clean(ish), so I used SImple Mill’s Pizza Crust and my god is that stuff good. Like really damn good.
Jonathan enjoyed it so much—he said it was his favorite pizza he’d ever had! (me: ????) But I guess I knocked it out of the park, seeing that I took him on this picnic for his birthday. We set up and spent the afternoon at the Menil—a wonderful park and free art museum in Houston—even brought the pup along. It may be cliché but there’s something nostalgic about eating dinner outside on a picnic blanket.
Here’s how I planned the perfect picnic:

Snacks: Fresh Fruit and my favorite, Jackson’s Honest Apple Cider Vinegar Chips—which you can get at your local Whole Foods. I love JH because their chips are slowly cooked in coconut oil, so they are packed with flavor and clean ingredients.
Pick a park—you could even do it in your backyard.

Apricot Prosciutto and Goat Cheese Pizza
1 Package Simple Mills Pizza Dough Mix ( + ingredients required in directions on box)
1 log fresh goat cheese, sliced into rounds
1 package prosciutto
1/3 cup arugula
Red pepper flakes, garnish
Following the directions on the back of the Simple Mill’s box, make the dough. Roll the dough into one big ball and then roll it out onto a baking sheet that has been lined with parchment paper.
Bake the dough for 8 minutes. Remove from oven, brush with olive oil, desired amount of apricot jam and top with goat cheese. Transfer back into the oven and bake for 13-15 minutes, or until the crust is golden brown.
Remove from oven and top with arugula and prosciutto. Sprinkle red pepper flakes over tops, slice and serve.
Waltermelon Mint Spritzer
Makes 4 Cocktails
1 GT’s Watermelon Wonder Kombucha (legit the best flavor)
1 glass bottle Topo Chico or any mineral water
2 handfuls of mint leaves
4 shots of Vodka (or more to desired preference)
In a large pitcher crush the mint. Add the ice then the vodka. Add the juice of 2 limes, mineral water and GT’s Kombucha. Stir and pour. Enjoy!
