Honey Vanilla-Bean Surprise Heart Loaf Cake

Honey Vanilla-Bean Surprise Heart Loaf Cake

What you need:

  • 2 Simple Mills Vanilla Cupcake & Cake box mixes 

  • 6 eggs 

  • 2/3 cup coconut oil, melted 

  • 1/2 cup honey

  • 2/3 cup water 

  • 2 tablespoons vanilla extract 

  • Pink or red food coloring 

  • Heart cookie cutter 

  • Loaf pan 

  • Sheet cake pan

Frosting: 

  • 1 cup vital farms grass-fed butter, softened 

  • 1 tablespoon vanilla extract 

  • 1 cup whipped clover honey 

  • Food color

  • Variety of piping tips

  • Ziplock bags 

  1. Preheat oven to 350 degrees F and lightly grease both pans with coconut oil. 

  2. Whisk the eggs, oil, honey, water, and vanilla in a large bowl. Add in the box mixes and whisk to combine. Divide the batter in half. 

  3. Add red food coloring to 1/2 of the batter (I used a lot to achieve color). Pour in the sheet cake pan, spread evenly and bake for 20-25 minutes, or until a tooth pick comes out clean. Allow to cool for 15 minutes before using the cookie cutter to cut out heart shapes (I cut out 18). 

  4. With the remaining batter, pour 1/2 inch into the loaf pan. Place the heart sponge cut outs upright, in the middle, down the length of the tin, and closely together so they support each other. Pour the remaining batter over the top of the hearts. Be sure they are well covered. 

  5. Bake for 20-25 minutes, or until a tooth pick comes out clean. Allow to cool for 30 minutes before frosting. 

  6. In a stand mixer with paddle attachment, mix the butter and honey together. Add vanilla, and whip until creamed together. Add food coloring. Use zip lock bags and different tips to create different designs on top. Slice and enjoy! XX
