Paleo Brown Butter Chocolate Chip Banana Bread

This Brown Butter Chocolate Chip Banana Bread is 100% Paleo and will quite literally rock your world—and if you’re looking to blow your mom away tomorrow for Mother’s Day, this ‘nanner bread will definitely get the job done. :) I’m kinda obsessed with how good this bread turned out.

I love baking with brown butter ghee because it adds such a deep nutty flavor that completely transforms anything and everything it touches (EVEN SCALLOPS).

Paleo Brown Butter Chocolate Chip Banana Bread

Total Cooking Time: 1 hour 20 minutes

INGREDIENTS:

Wet ingredients:

  • 6 ripe bananas, mash 5, leave one whole 

  • 3/4 cup brown butter ghee, melted +cooled 

  • 3 eggs, room temperature

  • 1 tablespoon vanilla extract

  • 1 tablespoon coconut oil, melted + cooled 

  • 1/2 tsp distilled white vinegar or ACV

Dry ingredients: 

  • 1 1/2 cups almond flour 

  • 2/3 cup tapioca flour 

  • 1/4 cup coconut flour 

  • 2 teaspoon baking soda

  • 1 cup coconut sugar 

  • 1 1/2 teaspoon salt

  • 1 cup chocolate chips 

DIRECTIONS: 

  1. Preheat the oven to 350 degrees F. Lightly grease a 9” x 5” loaf pan with coconut oil and then line with parchment paper. 

  2. In a large mixing bowl, whisk the mashed bananas and ghee until combined. Stir in the eggs, vanilla, coconut oil, and vinegar. Set aside. 

  3. In another large mixing bowl, combine all of the dry ingredients. Whisk well. Using a rubber spatula or wooden spoon, fold the dry ingredients into the wet until combined. Fold in the chocolate chips. 

  4. Pour the batter into the prepared loaf pan. Take the extra banana (the one that hasn’t been mashed) and slice in directly in half, lengthwise. Place the banana half or both halves on top of the batter, cut side up. Sprinkle about a tablespoon of coconut sugar over the tops of the banana. 

  5. Bake for 55-65 minutes (depends on  how hot your oven gets) or until a toothpick can be inserted in the center and comes out clean. 

  6. Cool for 10 minutes in the pan. Then turn out the bread onto a wire rack to allow to cook completely. Cut and serve!
