Whole30 Chimichurri Game-Day Wings


Whole30 Chimichurri Game-Day Wings

Cooking time: 55 minutes

Serves: 3-4

Ingredients:

  • 2 1/2 lbs chicken wings/drumettes

  • salt and pepper

  • ranch, for serving

Chimichurri sauce:

  • 1/2 cup olive oil

  • 3/4 bunch flat-leaf Italian parsley, stems removed

  • 1 bunch cilantro, stems removed

  • 4 cloves garlic, crushed

  • 3 tablespoons apple cider vinegar

  • 1/2 tsp salt

  • 1/4 tsp ground cumin

  • 1/4 tsp red pepper flakes

  • 1/4 tsp black pepper

  • 1/4 tsp oregano flakes

Directions:

  1. Preheat the oven to 425 degrees F. Line a large baking sheet with aluminum foil and top with a wire-rack.

  2. In a food processor or high powered blender, combine all of the ingredients for the chimichurri sauce and pulse on high for about 5 minutes.

  3. Pat the chicken drumettes dry and place them in a large mixing bowl. Coat with 1 tablespoon olive oil, 2 pinches of salt, and 2 dashes of pepper. Using only 1/2 of the chimichurri sauce, pour the sauce over the chicken and toss, using your hands, until well coated.

  4. Transfer the wings to the prepared baking sheet in an even layer, leaving an inch between each drumette. Bake for 20 minutes, before using tongs to turn the wings over. Bake for additional 15-20 minutes. Turn the oven to broil and cook for 1-2 minutes—this helps make them more crisp. Remove from heat.

  5. Using the remaining chimichurri sauce and a basting brush, brush the chimichurri sauce over the tops of the wings.

  6. Transfer to a platter and serve with ranch dressing.
