Whole30 Chicken Fajitas

If there’s one thing us Texans can all agree on, it’s our love for all things Tex-Mex—so you have my word when I tell you these Whole30 Chicken Fajitas are next level good. Not only are these a cleaner alternative to their yummy, buttery, grease-filled counterparts but they also take all of 30 minutes to whip up—making them a perfect fit for weeknight dinners.


Whole30 Chicken Fajitas


  • 2 lbs boneless skinless chicken breast, sliced into 1/4 inch strips 

  • 4 bell peppers, color of choice, sliced into 1/4 inch strips

  • 1 yellow onion, vertically sliced 

  • 1 large jalapeño, sliced in rounds, optional to remove seeds 

  • Siete Tortillas (omit if Whole30)

  • Guacamole, to top it all off 

  • Cilantro, for garnish 

For the chicken marinade: 

  • 1 tablespoon chili powder

  • 1 tsp ground cumin 

  • 1/2 tsp garlic powder 

  • 1/2 tsp onion powder 

  • 1/2 salt 

  • 1/4 tsp cayenne pepper 

  • 1/4 tsp black pepper 

  • Juice of 2 limes 

  • Zest of 1/2 a lime 

  • 2 tablespoons habanero sauce 

  • 3 tablespoons ghee, melted 


1. In a large bowl or ziplock bag, combine all of the marinade ingredients with the chicken, and toss until evenly coated. Allow the chicken to marinate in the refrigerator for a minimum of 30 minutes. (Marinading overnight makes these babies EVEN better) 

2. Remove the chicken from the refrigerator 30 minutes before cooking. 

3. Heat a large cast iron skillet over medium high heat. Add 2 tablespoons avocado oil. Add the peppers, onions, and jalapeños to the skillet and sauté for 7-9 minutes, or until the veggies are tender and beginning to brown. Transfer to a plate. 

4. In the same skillet, heat an additional 2 tablespoons of avocado oil over medium-high heat. Cook the chicken for about 4-6 minutes or until it’s no longer pink, turning the strips over half-way. Transfer the peppers, onions, and jalapeños back to the skillet and toss to combine. Turn off heat. 

5. Heat tortillas on a griddle and top them off with the fajita mix, guacamole, and cilantro.
