Whole30 Zoodles and Italian Turkey Sausage

Happy Monday Friends! I’m usually not this excited about Monday’s but this week is my birthday week, so I’m making the most of my last few days as a 24 year old—mid-twenties here I come! + I have a lot in store this week for y’all. Hope everyone’s January Whole30 is going well and if you aren’t doing it, I hope you are doin’ you and sticking to those resolutions/goals ;)

Whole30 Zoodles and Italian Turkey Sausage

Cooking time: 10 minutes

Prep Time: 2 minutes

* Tip: Buy precut broccoli and mushrooms to have this ready in 10 minutes


Ingredients: ⁣⁣⁣⁣⁣

  • 1 tablespoon ghee ⁣⁣⁣⁣⁣

  • 2 garlic cloves, minced⁣⁣⁣⁣⁣

  • 1 head of broccoli florets, chopped or broccolini⁣⁣⁣⁣⁣

  • 1 8oz. package of baby Bella mushrooms ⁣⁣⁣⁣⁣

  • 1/2 cup sweet cherry tomatoes, sliced in half⁣⁣⁣⁣⁣

  • 16 oz. zucchini noodles @cecesveggie⁣⁣⁣⁣⁣

  • 1.5 lbs ground turkey⁣⁣⁣⁣⁣

  • 1 tablespoon extra virgin olive oil  ⁣⁣⁣⁣⁣

For the Italian seasoning:⁣⁣⁣⁣⁣

  • 2 cloves garlic, minced⁣⁣⁣⁣⁣

  • 2 tsp parsley ⁣⁣⁣⁣⁣

  • 1 1/2 tsp sea salt ⁣⁣⁣⁣⁣

  • 1 1/2 tsp black pepper ⁣⁣⁣⁣⁣

  • 1 tsp paprika⁣⁣⁣⁣⁣

  • 1/2 tsp oregano ⁣⁣⁣⁣⁣

  • 1/2 tsp fennel ⁣⁣⁣⁣⁣

  • 1/2 tsp thyme ⁣⁣⁣⁣⁣

  • 1/2 tsp red pepper flakes, + more for garnish/to taste ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣

Directions:⁣⁣⁣⁣⁣

For the Italian seasoning:⁣⁣⁣⁣⁣

  1. Combine all of the spices, except for the garlic, in a bowl, whisk with a fork. Set aside.⁣⁣⁣⁣⁣

Everything else: ⁣⁣⁣⁣⁣

  1. Heat ghee/oil in a large skillet over medium-high heat. Add in the garlic and sauté for 1 minute. Add the broccoli and mushrooms and cook for 2-3 minutes (Add more ghee/oil if needed). Add in the tomatoes and cook for another 2 minutes until they are beginning to soften. Add in the zucchini noodles, season with salt and pepper to taste, cook for 2-4 more minutes (depending on desired texture of the zoodles—I like mine at 2 minutes).⁣⁣⁣⁣⁣

  2. While the veggies are cooking, heat a cast iron or skillet with olive oil over medium-high heat. Add the garlic and sauté for 1 minute. Add the ground turkey, breaking it up with the back of a spoon/spatula. Add in the Italian seasoning, combine well. Cook turkey for another 4 minutes, until cooked through. ⁣⁣⁣⁣⁣

  3. Now add the turkey to the veggies, toss well to combine, and serve hot—sprinkle with more red pepper flakes to spice up your life.
