Sweet Potato and Chicken Apple Sausage Skillet


Lately it seems that I just can't get enough breakfast skillets in my life. There are so many different variations out there, especially healthy ones. I think my love/addiction to breakfast skillets stems from my favorite breakfast spot, Medina Cafe in Vancouver, B.C. If you’re ever in Vancouver, this place should be on your list of places to go. I constantly day dream about their pulled pork Fricassee and their mini Belgian waffles, so much so, that I am working on perfecting my own Whole30 and Paleo-inspired versions of them.

In the meantime, this bad boy is just gonna have to suffice.

And not to be boastful, but I think this skillet is pretty damn good---it exceeded even my own expectations. There is something so delicious about the combination of flavors in this dish, with the sweet potatoes complimenting the apple sausage perfectly. Not to mention, sweet potatoes are loaded with a multitude of health benefits. Sweet potatoes are not only rich in vitamin B6, C and D, but they also help promote a healthy immune system and can even help protect against the effects of aging. I swear y'all, when I eat sweet potatoes everyday for a week straight, my skin starts to glow.

This recipe is also great for meal prep. I usually make a large batch on Sunday mornings and then eat it throughout the week for breakfast.

But enough rambling, lets get to the recipe. Hope y'all enjoy it!

Sweet Potato and Chicken Apple Sausage Skillet

Serves: 2-4

Cooking Time: 30 minutes



3-4 medium sweet potatoes, diced

1 package (4 links) of Chicken & Apple Sausage, 1 inch slices (I prefer Applegate)

1/2 cup yellow onion, diced

2 Tbs avocado oil

1/2 tsp garlic powder

1/4 tsp thyme, dried

Salt and Pepper, to taste

3-4 Eggs (optional)


1. In a microwave safe bowl, microwave the sweet potatoes for 5 minutes.

2. Heat skillet over medium high heat, with 1 tablespoon of the avocado oil.

3. Toss sweet potatoes with the remaining tablespoon of avocado oil, and season with garlic powder, thyme, salt and pepper. Add sweet potatoes to the skillet and cook for 7 minutes.

4. Add onion and sausage to the skillet with sweet potatoes and cook for an another 3-4 minutes.

5. Set oven to broil and cook skillet for 2-4 minutes. Be sure to watch carefully, as some oven temps vary.

6. Top with eggs, cooked to your liking. (I prefer mine over easy or sunny side up for this dish)
