Whole30 Italian Sausage Sub Sandwich

It’s Super Bowl Sunday, which means the last thing you probably have time for is meal prep. Fortunately, I’m sharing my go-to lunch during the week when time is not on my side. These subs are flavor packed, satisfying AF, clean, easy, and take all of 15 minutes to prepare—with Italian sausage, caramelized onions, sautéd bell peppers and mushrooms, mayo and dijon mustard, your taste buds will be thanking you!


Whole30 Italian Sausage Sub Sandwich

Prep time: 5 minutes

Cooking time: 15 minutes

Total time: 20 minutes


  • 1 tablespoon olive oil 

  • 1 pound Italian Sausage (sweet or spicy) 

  • 1 large green bell pepper, sliced into strips

  • 1 large red bell pepper, sliced into strips 

  • 2 yellow onions, 1/4” slices 

  • 3 cloves garlic, minced 

  • 1 tsp fennel seeds 

  • 2 tablespoons water 

  • Iceberg or green leaf lettuce (best for wraps)

  • Mayo (desired amount)

  • Dijon mustard (desired amount)

  • Parchment paper


  1. Heat the olive oil in a large skillet over medium high heat. Cook the sausage for 10 minutes, turning occasionally. Add the bell peppers, onions, garlic, fennel seeds, and water. Cover with lid and cook for another 5 minutes, or until vegetables are tender. Stir often to prevent burning. Remove from heat. 

  2. Watch this video, courtesy of Danielle Walker, on how to assemble a lettuce wrap sandwich. On a large piece of parchment paper, place about 6 large pieces of lettuce, forming a circle. In the middle add the dijon mustard and mayo. Now add contents from the skillet. Follow instructions in video on how to roll the sub.
